Who doesn’t love a breakfast muffin or a dessert with apples? These apple harvest muffins are for apple lovers only. Why? Because these delicious muffins are jam-packed with 5 ½ cups of diced Fiji apples. Yes, 5 ½ cups of juicy, sweet, crisp Fiji apples. You get all the flavor & juiciness, with none of the gluten, dairy or refined sugar! They’re simple & easy to throw together & contain zero fussy ingredients.

Prepare to have a party in your mouth with these incredibly delicious & versatile muffins: dress them up or dress them down. Dress the apple harvest muffins up with a scoop or two of vanilla ice cream, along with a hot mug of Hippie Coffee. The muffin liners “dress down” the apple goodness for an easy grab-&-go-breakfast.

APPLE HARVEST MUFFINS… GLUTEN-FREE …WITH ZERO FUSSY INGREDIENTS

DRY INGREDIENTS

WET INGREDIENTS

  • 2 t. Vanilla extract {make sure it’s gluten-free}
  • ½ coconut oil {melted & cooled}
  • 2 eggs

If you miss eating apple cake or apple pie, you no longer have to rely on frozen & overly processed gluten-free sweet treats from the grocery store to satisfy your craving.

As with most of my gluten-free recipes, these Apple Harvest Muffins were a family favorite recipe that I modified to fit my gluten-free lifestyle.

Why we no longer specifically buy “gluten-free” cookbooks…

We’re extremely picky-eaters & transitioning to a gluten-free lifestyle was a super difficult time. {Just a disclaimer: hubby eats gluten-free 85% of the time.}

The gluten-free transition struggle…

We actually hated 99.5% of the gluten-free/Paleo/AIP recipes that we tried… because they sucked so bad!

Our solution…

Since we’re creatures of habit, we decided to stick with our favorite recipes… but modify & tweak them to be gluten-free & a bit healthier! I’m most proud of all our favorite sweet treats {pumpkin pie, blueberry muffins} that I’ve successfully modified. These yummy Apple Harvest Muffins have also been added to that list.

 

Apple Harvest Muffins {Gluten & Dairy-Free!}

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: 24 muffins OR 1 cake

Gluten-free Dairy-free Refined sugar-free Makes 24 individual muffins OR 1 13x9 cake

Ingredients

  • 2 C. Pamela's BAKING & Pancake Mix **
  • 1/4 C. Organic Coconut Palm Sugar
  • 2 t. Baking Soda
  • 2 t. Organic Cinnamon
  • 2 t. Vanilla Extract {make sure it's gluten-free}
  • 1/2 C. Coconut Oil {melted & cooled}
  • 2 eggs
  • 5 1/2 C. Organic Fiji Apples - peeled & diced
  • **Make sure you're buying the correct gluten-free baking mix. It needs to say "baking"

Instructions

  1. 1. Combine dry ingredients in a large bowl {g-f baking mix, coconut sugar, baking soda, cinnamon}
  2. 2. Mix wet ingredients in a small bow, until combined, with a fork. {melted & cooled coconut oil, eggs, vanilla extract}
  3. 3. Pour the wet ingredients into the large dry ingredient bowl & stir. {This batter will be VERY thick}
  4. 4. Stir the apples into the thick batter for 1 minute. {Stir for 1 minute to release some of the natural juices from the apples.}
  5. 5. Divide Apple Harvest Muffin batter into 24 lined muffin tins OR into a 13x9 dish for a cake.
  6. 6. MUFFINS - Bake at 350 for 20-25 minutes OR until inserted toothpick comes out clean.
  7. 7. CAKE - Bake at 350 for 30-35 minutes OR until inserted toothpick comes out clean.

SIMPLE & EASY APPLE HARVEST MUFFINS

So simple you don’t even need your electric mixer…

  1. Combine all of the wet ingredients into a small bowl & stir with a fork until combined.

2.  Pour the combined wet ingredients into the large bowl of dry ingredients & stir. {Note: The batter will be VERY thick.}

3. Peel & Dice 5 ½ Cups of Organic Fiji Apples.

  • You could also use any apples that are equal in sweetness. {Gala, Golden Delicious, Red Delicious, etc.}

4. Add the apples into the thick batter. Stir for 1 minute or until the apples have released some of their natural juices into the thick batter.

5. Divide equally into 24 lined muffin tins & bake at 350° for 20-25 minutes. 

  • If you want to bake this Apple Harvest batter into a cake, pour into a 13×9 dish & bake at 350° for 30-35 minutes.
